Greetings,

Does anyone know of a USB supported digital audio optical out that is supported in OSX?

I would like to utilize this for my Minidisc player.

The Roland ED UA-30 should do the trick in OSX.

Go take a look at Xitel.com. They sell a usb-to-optical link converter for around $60. I just got one for my home stereo. It also specifically works with mini-disc players. Works in OS 9 and X. No software needed.

I made an old 8500 into a OS X MP3 jukebox with this thing.

How does it work with OSX? When plugged in is all audio routed through the USB?

It works like USB speakers in OS X. If you open up the Sound System Preference, you can set the alert sounds with the internal speaker and the Audio through the Digital converter. It is so amazingly simple. I actually don't know why I haven't come across this before. No drivers or software. It just works.
