Does anyone know of any USB to Ethernet adapters on the market for Macs. I know there are some PC products like this, but I can't find one on the Mac.

What's your application? All machines that have USB also have built-in Ethernet...

I made a similar experience using a cable modem through USB, which is a similar case. I searched the web as thorough as possible regarding cable modems and support. I also tried DSL modems and USB-ethernet converters. I found not a single one which is supported by MacOS. All of them were Windows98 only. I also tried the USB Development Kit, where I found a Enetshimlib for USB and similar stuff. No succes with my modem, though. Anyone any luck with those beasts using a USB-ethernet adapter?
My last try is to push Apple.

Why would anyone need to do this? Ethernet is Built-In in every mac that supports USB.
Why would anyone want to use an adapter instead of just plugging into the ethernet jack that is already there?
If the response to that question is something like "but I already have my ethernet connected to my network...", then the response is Buy a Hub or a switch. Hubs can be had for under $30 and work perfectly for this situation.
