Need to Digitally Record Phone Interviews: How Best to Do This?

I need to conduct some phone interviews and then transfer to a CD.

What is the best way to do this? Do I get one of those small digital recorders (Olympus?) Or is there some easier way to do this? I use a headset when i talk on the phone. What method would best accommodate this? Thanks.

Look at PhoneValet, it might do what you want.
