Does anyone know where to get one? Is it possible to get Apple to customize one for me?

I don't know of anyone producing 30" high res LCD panels with the glossy surface coating. The displays from Apple, Dell, Gateway, HP, and Samsung are all matte.
No, Apple won't customize one for you.

I don't think glossy 30" will be produced. Except someone wants to flash signals from his computer to a distant mountain top.
If they'll be ever produced, I hope they come with sunglasses with anti-reflective coating.

The new Dell 3008FPW may be glossy; it's hard to tell from the pictures. It's expensive ($2000), but it supports DisplayPort, which may become the next generation of popular display connector.

30" is really in the professional realm for a monitor at this point. Most professionals want something that isn't glaring back at them if they work in a well-lit room or they dislike the oversaturated colors. Perhaps in time when 30's become more affordable there will be more options.
