I'd like to create a better desktop environment with a docking station or something.

This is what I have and want connected with as little cables as possible:

MacBook 13"
19" Monitor
MS Wireless keyboard/mouse (USB)
Ethernet cable
Speakers

Are there any good docking stations for MacBooks that supports video/ethernet/speakers/usb?

There are no true docking stations, in the sense of PC laptops, because Apple doesn't build a docking port into any of its laptops. You can get what amounts to a port replicator from BookEndz, but I personally have not found them to be worth the price.
