I have an original 23" Cinema Display (plastic frame) that's still darn pretty. Can I use the mini-DVI adapter to give dual-monitor capabilities to an Intel iMac? (I think I can....)

You need an ADC-DVI adapter, then the answer is yes. I've had a 17" ACD on my desk for quite a while, worked like a charm, including the brightness button (awesome gimmick!).
I don't suffer from insanity, I enjoy every minute of it.

Yes, with a $100 DVI-ADC adapter from Dr. Bott or similar.
