What program do you use to extract audio in OSX?

I use to use Toast Audio Extactor that came with Adaptec Jam to extract AIFF files, but now I need one for OSX. Thanks.

I'm not exactly sure if this is what you're looking for, but if you want to take music off of a CD and make .aiff files, then iTunes will do it.
