I was trying to convert some audio with quicktime and it doesn't have the option to convert to mp3. Did apple take it out with quicktime 6 or am I just not seeing it.

QT Player has never had an MP3 export function that I can remember. Save the audio as AIFF and then you can use any of several 3rd party mp3 exporters, including iTunes, I guess (don't have that one in 8.6 OS) I have used BladeEnc a lot. It is freeware and can take input from several Mac audio types, including AIFF and System Sounds.
