I'd recommend a "codec box". VHSc player <svideo or composite> codec box <firewire cable> firewire port of Mac.
Sony made one, but it was discontinued. We buy the Canopus ADVC100, but I have no problem in recommending the Dazzle Hardware Bridge

Another benefit is that you can export from the Mac to VHS/VHSc if your audience doesn't have DVD yet.

I have the dazzle and have no problems with it, but one interesting idea that I wish I had been given before buying is that you can buy a cheap DV camera, and that will double as a converter and a camera

If you just going to be trasnsferring a limited number of tapes getting a DV camera with an analog input is a good idea. If you are going doing some heavy transferring of analog sources, something like the canopus ADVC-100 as mentioned above might be a better option. I have it and it works well. I'm not sure if the DV camera option has problems with audio-drift (audio coming out of sync with video) but the Canopus has locked audio which eliminates that problem.

Direct analogue to DVD can be done with a standalone DVD recorder. $525 for a Panasonic DMR-E30. I've converted some VHS tapes this way.

The only issue is that these discs don't seem to play with OS X's DVD player anymore. They work in OS 9.2, OS X.1, and OS X.2 if I log in as root. But they don't play in OS X.2 if I log in with a standard administrative account.

Apple is aware the issue.

The discs play on my PC and on my standalone DVD players.

Two things you can do:

One is to get the Hollywood DV Bridge. I haven't tried it myself, but that seems to be the product people point to when this issue comes up.

The other is to transfer the tapes to a DV-8 Firewire camcorder, and then transfer that to your Mac using Firewire.
