With the HD desktop revolution imminent, what model mac would be able to handle playing and editing 1920x1080 resolution video ?

If you're talking about editing uncompressed or close-to-uncompressed HD, I'd start with at least a 1.2ghz G4.

It's not so much the processor though...the biggest (and most expensive) piece of the puzzle is a drive array that can keep up with the insane data-rates you'll need.

It's going to be 3-4-5 years before desktop HD reaches the ubiquity that DV has attained. By then we'll all be running G6s with 8gbs of ram.

Current range of Macs can't do HD without 3rd party video cards to capture from relevant HD video players/recorders. Take a look at the Pinnacle Cinewave card which goes in the Mac, works with Final Cut and has a range of input options.

There is also the Kona HD card that does a very good job. I saw a convincing demo at NAB and at Siggraph this year.
