The merits of recording a mic to MP3 directly

I would like to record certain talks on my PB. I seem to have all the hardware, a mic, an amp, a mic jack. However, what software would I use to record sound to MP3s directly. Obviously, if the talk is 2h long or even a whole conference's worth, it would take too much disk space to record to WAV or AIFF first and then to convert to MP3.
So, what's the best current software that can record to MP3s directly?

Don't be too sure! Two hours (120 minutes) of AIFF would only take 1.2 gigs or so... if you've got a nice big 80GB hard drive, it's fine.
But that 1.2 gigs is for a high quality recording... if you can skimp and downsample the AIFF right away, then you can fit even more on.
So, what's the best current software that can record to MP3s directly?
I don't actually know of anything that will do that... but there are some workarounds, as described above.
Take a peek on macupdate.com and versiontracker.com if you haven't already, though, who knows.

i'm pretty sure that audio hijack will record to mp3 directly.
but i wouldn't do that myself, AIFF all the way for me. edit out the crap afterwards, then encode to mp3 or aac. and, as funkboy said, 2 hours is only 1.2 GB.

since you'll be recording a talk, I'm sure mono will be fine, so you're talking about 600KB or so for two hours.
That's not really worth having a seizure over.

The thing that worries me a bit about that solution is that the iPod OS allows for only 16 kbits/s sampling. While I am looking to record a talk, I would like somewhat better quality.
