5.1 audio and Quicktime

Does quicktime support any type of 5.1 audio in terms of mp4 etc?

Nope. It was actually in the pre-release builds of 10.3, but it was pulled for the final release. I suspect we'll see it in 10.4, as the Quicktime architecture needs to be changed to take advantage of CoreAudio for multichannel to be implemented. Hopefully we'll know for sure after WWDC when people get their hands on 10.4.

Sigh.. I was hoping for another answer I found on some sites that there is (Windows only though) programs that can go AC3 to 5.1 aac... But again, with your news, it looks like it's not a possibility yet.

Do you think 5.1 support would just be an option in the 'options' menu of the mpeg 4 or aac exporting options?
