recording hdtv to dvd?

My goal is to archive HDTV and standard cable shows on DVD.

I'll probably purchase a mac-mini within the week to use as a HTPC. It's primary job will be as an iTunes jukebox connected to my stereo and plasma. I've also recently looked in to using this system to record TV content. I have configured this successfully on my Powerbook, but now question how to get the m2t files to a format capable of being burned to DVD. Is there currently a solution for this?

I've been introduced to El-Gato's EyeTV 500, which has a ton of useful features. Is this a better route for recording TV content? I'd like to save the $350 if I can mimic everything on the mac-mini. I don't need any of the scheduling features, as my current Comcast cable box will handle that well enough. Is there any other reason to chose the EyeTV over a custom mac-mini setup?

I think MPEG Streamclip with the MPEG-2 component can convert m2t files to something more useful.

Edit: Seems like you might be able to do it without the component, maybe it's only needed for editing.
