ripping dvd's to stream in my house -- what format to use?

hi all. i want to rip some of my dvd's so that i can use my media streamer to stream them around the house. my question is what format should i rip them in order to maitain quality while keeping them on my imac harddrive? i am a real novice with this stuff, but it seems that there is a fair difference between mpeg2, .mov, mpeg4, etc. how do i pick the format to use?

for reference:
> none of the dvd's are 5.1 or anything.... mostly they are athletic events. some have high quality soundtracks though, that i would like to sound good.
> i would like to maintain as much of the dvd quality as is reasonably possible
> video output should be full screen on a tv. i have large hdtv's in the house, although i know they material won't be hd per se, i want it to play as if i had it in the dvd player if possible
> would be great to maintain menus if possible. if not.... oh well.
> will be using a few media streamers to push the video around the house. currently, i have an eyehome. i plan on seeing what apple does with front row though and possibly updating with any new products on the horizon.

i appreciate any help with this. also, any online resources that help teach a novice would be great. everything i googled pretty much sucked and was not helpful. thanks!
