I just purchased the new Sanyo Xacti HD1 high-definition camcorder ( www.sanyodigital.com ).

What software other than iMovie HD would be good for HD video files? I have Final Cut Studio, but frankly, it is above my level at this moment. I'm an expert Photoshop user, but up to now, have only used iMovie for video editing.

If iMovie isn't enough and Final Cut Pro is too much, how about Final Cut Express?
FCE is a big step up from iMovie, but not as big as the step to FCP.
