I have a bunch of concert DVDs that I'd like to convert into mp3's so I can put them on my HD. What would be the easiest way to do this?

there's no easiest way, because a) copyprotection of commercial dvds b) audio is muxxed on a dvd c) commercial dvds use widely ac3 as audio codec, not easy to get it & convert it...

easiest way:
connect audio-out of ext. dvd standalone player to audio-in of Mac; use any audio app (Garageband/Audacity/QTpro7/..) to record audio, export as mp3....

The easiest way is either Mac The Ripper 3.x (which is still in beta) or Cinematize (which costs around 50 or 60 for a license.)

Both of these have the option to rip and convert the audio.

MTR, as any Ripper, overrides copyprotection...- which is in many territories, for good reasons, not allowed.

the old OSeX in combo with mAC3 is another ripping&audio converting combo...

just to mention that:
pay the artists//respect local laws//get good kharma

Cinematize, to my knowledge, doesn't "rip" protected DVDs... the export to .aiff or whatever, is supported by many apps, QTpro (in combo with 20$ mp2 plug-in), Streamclip (same plug-in, mpeg2works.... (same...)
