Extract audio from a mkv file?

I wish to extract the audio from a matroska (mkv) file. The file doesn't play in quicktime but plays in VLC. However I can't figure out how to extract just the audio and preferably be able to play it in itunes.

Use VLC's export wizard, or mkvtoolnix, or ffmpeg, or audio hijack or wiretap
