Is it possible to use Imovie to capture video from a non DV camcorder using the RCA jacks and/or S-video jacks on the back of a video card? If not, what is a relatively decent app that will allow me to do so? Also relatively cheap (read shareware).

Yes! There is a good other app that will help you get a video in signal. it is BTV edit, and it is shareware.

once you capture, I assume you can import it into iMovie.

You may also want to consiter buying the interview from XLR8, it is a USB to video converter that I understand is really good. not broadcast quality, bt for those who edit with iMovie, you probably won't mind.
