How do I go about converting MPEG-1 audio (demuxed from an SVCD) into aiff or something FCP3 can recognize? There's nothing useful in QuickTime's Export or Save As dialogs...even in QuickTime 6.

I've been using SoundApp in classic to convert to aiff, but I recently learned that changing the file name to *.mp2 (and stripping the type/creator codes may also be necessary) will allow iTunes to play/convert it.

I had some mpeg-1 song files that I wanted to add to my iTunes (5.0.1) library and also transfer to my iPod. Changing the file extension to *.mp2 worked exactly as described - iTunes then recognized the files and let me add them to the library (there was no need to fiddle with type/creator settings). In order to transfer the music to the iPod I had to convert the *.mp2 files to AAC: in iTunes select the songs and then do "Advanced / Convert Selection to AAC". Final step (if you like): delete the *.mp2 versions from your library.
