If I want to capture video from an 8mm Video camera, that only has video out and left and right audio out, do i need a DV bridge?

Yes, you'll need a bridge of some kind if you want to use apps like iMovie or Final Cut. You could get an external like the Sony Media Converter or the Dazzle Hollywood DV. Also most DV camcorders can act as a bridge. If you're going to spend $300 or so on the bridge, get a cheap Sony Digital8. It's around $700, but can play-back 8mm and Hi8 tapes as well as go digital. That might be the best of both worlds for you.
