I want to use DVDs made with iDVD 2 to archive video. Is there anyway to capture video & audio from these unencrypted discs via FinalCut Pro or some other method? In the end I want to be able to edit the video.

You can extract the files using DVD ripping programs and when QuickTime 6 comes out you will be able to play back the MPEG-2 files in Final Cut Pro or convert them to DV. It is allot of work. Making a Motion JPEG file and saving it on a DVD as data would probably be easier.
