Is it possible to make an mp3 file from the audio input source? I mean, without making an AIFF file first. I thought this feature was in SoundJam (The pay for version), but I don't see it in iTunes. I would like to record a radio show and make it into an mp3 to save storage space.

Don't think it's in iTunes. Only SoundJam.
