Help, I just upgrated to iTunes 1.1, but now when I select Visual Effects, the images are very rough and pixelated. On 1.0 the effects were awesome! What did I do wrong?

Try giving the application more memory. If you don't know how, ask back here, and someone will tell you. (Though probably not Ca$h.)

turn off virtual memory for smoother flowing presentation of the graphics too, and be sure you have monitor resolution & colors set to highest settings.

i think...
1. run visuals (not in full screen mode)
2. click on options
3. deselect faster but rougher...

I'll second the memory suggestion. I've got alot, so I gave it 80 MB. Overkill I'm sure, but it runs much quicker and smoother now.
