I have a PM 6100 AV with a video capture card. I can obviously capture video with this but can I transfer it to my G3 and useiMovie to edit it? Everything I have seen on iMovie talks about digital cameras.

Yes you can but you will need to convert your captured footage to the DV stream format. Quicktime Pro will do this for you. Be warned that the DV format eats up acres of hard disk space (200MB of space per minute of footage) and you will need a convenient method of moving it between your Macs.
