Moving the documents folder

I want to be able to save files to the documents folder only, and have it set that way in the General Control Panel. But, I want the documents folder to reside on a different volume. Can I move the stuff to another volume and just make an alias called documents on my boot volume?

Has anyone tried this? I am trying to avoid using Default Folder.
