For many of my machines - mainly beige G3's, but some
G4's - once I install toast, the cd/dvd driver gets killed and I
have to reinstall the driver. has anyone seen this and if so
can you suggest a work around? thanks

Try renaming the Toast reader extension to !Toast so that it loads before the Apple driver.

Had lotsa problems reading CD's on internal iMac DVD drive (sometimes they would mount, othertimes not, sometimes it would take a few tries, etc., etc.) until I restored the Apple driver and re-named the !Toast.

It may be a coincidence, but everything works fine now.

It'll only take you 2 minutes to check it out.

I recently saw this article on MacFixIt, maybe it will be helpful.

I've also heard that turning off Toast's "Adaptec UDF Volume Access" extension has sometimes helped.
