File Sharing Specific Folders Only

I have a simple question which I've never needed to know before, but now that I'm trying to do it, I can't seem to figure it out.
I have a file sharing account for someone else setup on my computer. I'd like to have file sharing setup so that when this person connects, they connect directly to their own folder, and they cannot even view any folders outside of their folder (System, other docs, etc).
How do I do this?

Set up the user.
Make them a folder.
Get info on that folder - go to sharing from the pop-up menu.
Set it up from there

What about the permissions for the folders above the shared folder?

If you set a folder as the share point, that's treated as the "root" for that user. They won't even see the folder above the shared one, let alone be able to access any of the information.

I'm still having major issues -- the process isn't clear.
I have a UserY's folder setup as follows:
Owner: UserY
User/Group: UserY
Everyone: --
But when UserY logs in they see the entire disk. I want them to login to only their folder.
My hard drive is setup as follows:
Owner: <Any User> (when it's set to UserX (me), UserY cannot even login)
User/Group: <None>
Everyone: --
Help is appreciated. I know this isn't a huge task, but it's such an ordeal.

Open the File Sharing Control panel, and click the Users and Groups Tab. Click on the user and click open. Under show, the drop down box, sharing, uncheck allow user to see all disks. Under Activity monitor, shared items should be the Folder you want to share. Go to finder, and select the Mac hard drive, get info, sharing, and uncheck the box that says share this item and it's contents. Go to the folder you want to share, select, get info and check share this item and it's contents.
