is there a way to add to the labels that are used to color code files

as default they are

essential, hot, in progress..etc...

I would like to add a few more

I don't think you can add new labels, but changing them is pretty easy. Just select "Preferences" under the Edit menu and click on the "Labels" tab. Click on the colors if you want to change them.
