How long should I save the Virex anti virus downloads? Is it safe
to trash some that go back to 1999 in order to save disk space?

No, I wouldn't do so, it's always possible that an ugly virus is waiting on a disk or within a file, even if the virus is that old.

download the latest virex dat file, double click on it and say yes to update virex, trash all old dat files, you don't need them. http://download.mcafee.com/updates/datmac.asp

If you have downloaded virex, you can look in the installer folder, take out the old dat file and put in the new one.(this is for backup purposes)then put the complet intaller folder onto a zip disk.

I think that he means is "can he throw away the update files (monthly def's)".

The answer is yes - you can toss them right after you do the update. So if you keep all of those old files, they're just wasting space.
