How do you change the boring grey Microsoft Word Docs icon to a more uniform icon that possibly has some kind of MS Word logo. Same for other files too (Excel, SoundJam, etc..)

Rebuild the Desktop. (Hold down the command and option keys at startup until you're asked if you want to rebuild the Desktop.)
