When I insert the CD of of OS X it starts up and I can't access the data on the disk. Is there a keyboard shortcut to prevent it from strarting up or any other mean to access the data.

Just don't have the CD in the drive at startup. Then it should boot from your internal hard disk. Insert the CD after it's booted.

Then go to System Preferences and set your startup disk to your hard disk instead of the CD, and from then on it will start from your hard disk even if the CD is in the drive. After this, if you want to start from the CD, you can do so by holding down the C key at startup.
