Admittedly, I'm out of the loop. I haven't bought a new mac in years. But I picked up one of the new 1Ghz iMacs at an Apple store on Tuesday, and if there is in fact a power key on the keyboard, it sure isn't obvious to me. I had heard something about using the eject key to turn it on, but that didn't do anything... any thoughts?
Other than that, the new machine seems awesome. I haven't really seen OS X since back when it was in beta. It's come a LONG way.

Power Button? Wow you have been out of the loop. apple stop making those after the first imacs (to my knowledge). So yeah, power buttons are no longer on the keyboard, just the on the tower/monitor.

the solution to not having a sleep button?
don't turn it off! (wait don't scream yet)
OSX will wake from sleep in a matter of seconds. Put the mac to sleep of a night, hit any key or move the mouse in the morning to wake it up.
My power book spends many weeks between reboots.

There are a number of keyboard combinations to replace the power button, the coolest of which is Control-Eject, which brings up the dialog box that used to come up in 9.x when you hit the power button. You can then use S for Sleep, R for Restart, etc.
As for the other commands, I THINK it goes like this:
Command-Option-Eject...Sleep
Control-Command-Eject..Restart
Control-Option-Eject...Shut-down
(Feel free to experiment, but I"m not sure of these!)

ngrundy is right. Don't turn the machine off. Just log out and walk away. It will go to sleep. When you come back, hit any key and it will wake up.
By the way, the part about logging out is optional, but more secure. You can just stay logged in and walk away, it will still go to sleep.
If you still miss the power button, draw a pretty picture of a power button and tape it to the top right corner of your keyboard.
