It should work.

According to Apple Mac OS X Server page, the system requirements are:
  • Xserve, Macintosh Server G4, Power Mac G4, Macintosh Server G3, Power Macintosh G3, iMac or eMac
  • 128MB of RAM; at least 256MB of RAM for high-demand servers running multiple services
  • 4GB of available disk space
You shouldn't have any difficulties.

The only question would be "Why not use a server computer for a server OS?"

It will work. I have installed OS X Server on a PowerBook before, and it worked fine, even though it is not recommended for a PowerBook.
