Are there any specific updates I need to install? I have been to the Apple site, but they all seem to be for OS 8.6 or 9.0.x. Are there any non OS specific updates? Is the ROM update or the CD ROM update for OS X computers?

I have a 450mhxz G3 (768 MB RAM) running 10.2 and it is not the most stable Mac I have used. It seems like something may be wrong.

The B&W should be a stable machine to use with OS X.2. Do you got the latest rom installed (1.1f4)? If you got rev. 1 of the B&W you might experience a datacoruption error on your HD. Check out this site for more info: http://www.xlr8yourmac.com/G3-ZONE/yosemite/index.html

Did you try and update the firmware? I know that my girlfriend's sawtooth was very unstable when we installed 10.2 without updating the firmware.

Bad RAM is a common cause for freezing in OS X. RAM that works fine with OS 9 could still cause problems in OS X. My G3 was having random freezes. I removed all but one of the sticks of RAM and the problems went away. OWC has good prices on RAM and they will take it back if it's no good. All the RAM I have gotten from them has worked well.
