So I'm checking out those oh-so-sweet G5s at The Apple Store Short Hills and I notice they're running 10.2.1 ! It just seems plain crazy to me that they're not running a developer's build of Panther, or at the very least the most recent version of Jaguar. It's either the new G5 is incompatible with the current Mac OS X, needing it's own special build, or Apple is too lazy to bother with an update of their demo units before they ship them out. Of course, why wouldn't the manager of The Apple Store do the update. It's only 2 units and Software Update would take care of it. All the computers there are online anyway so it's just a few mouse clicks. WTF?

You sure that 1 wasn't a 7? Aren't they supposed to ship with 10.2.7? I dunno about having a pre-build on there, though -- Apple probably wants that for developers' eyes only. Well, and warezers.

I think you need to clean either your glasses or the screen they were hooked to. You've mistaken a 1 for a 7. The G5s are running a special version of OSX (10.2.7). It's just a few extensions added to the kernel and some low level system libraries to allow the G5 to run fully 64-bit applications and to be able to map to its full 48-bits worth of address space. Most of the rest of the OS is and will remain for a while 32-bit. There's little to be gained from recompiling the entire OS as 64-bit binaries just for the G5s. All that would do is make pointers 64 bits wide and cause binaries to take up more disk space.

It would also bit a little absurd to put pre-release software on the G5s. They are being demoed with the OS version they will be running when they get to your house. Putting an OS on them that will not be released for a few more months yet would be pretty retarded.
