Is it possible to connect an older Apple monitor (such as the ColorSync 20" display) to a G5? I realize I would need an adaptor, but I think I have one somewhere here.

If it's a VGA-connector then yes, it's possible to hook it up to a G5.

But its not, its the OLD kind of connectors...the DB15. There are DB15 --> HD15 (VGA) adaptors...will one of those work in conjunction with the DVI-VGA adaptor that comes with the G5?
