I'm planning on buying a new video card for my eMac, and would like to know how to go about installing it myself (I never trust the shmucks at comp. stores).

Well don't waster your money, because it's probably not possible, the eMac is designed in a way that you can only upgrade the RAM. The only iMac/eMac that you could install a new video card in was the first generation bondi blue iMacs (rev. A/B).

Good luck finding a video card for an eMac. The video card is not upgradable.
Why is there always money for war, but none for education?

Actually, you couldn't install a new video card in any iMac ever. The game wizard voodoo card was an accessory and didn't replace the main video card.

The original iMacs could take the game wizard and a processor upgrade, but no iMac after that was as upgradeable.
