Yes, unfortunately. I can't see any way of mirroring an existing disk.

on the Darwin side i'd say it should be possible to mirror the disk. if they're identical you could copy the partition table and then 'dd' the drive contents over - only when the drive is not mounted of course.

what wonders me is if there is no mechanism to attach the mirrored drive to the first one. any Xserve admins know how to do this?
