I've installed some extra hard drives in my MDD, it's pretty easy. I'm guessing you're referring to the rear hard drives? If you look at the top of the cage between it and the power supply, you'll see a screw. You need to take that screw out, then gently push the cage up to unlock it, then take it out. I don't know why but even with the latest 1.2Ghz OS 9 bootable MDDs, Apple still hasn't noted that that screw is there. If you don't have a magnetic screwdriver, just take a regular one, put some tape on the head, put it over the screw, secure the tape and take it out.
A bit of advice BTW, if you're installing a second hard drive (for a total of 2), you may want to put the new drive on the ATA 66 bus which is the one at the front. You can put both on the ATA/100 bus but only one drive can utilize the bus at one time so you'll get better performance overall by splitting things between both ATA busses. Just make sure you plug in the ATA/66 cable into the motherboard, by default it's not plugged in. Just look under the IDE cables for the DVD drive and you'll see an empty IDE connector.
