I have an original SP 1.8 G5. I've sold this machine and will soon take delivery of a new DP 2.0. Question: Can I simply remove the HD from the 1.8 and swap it out with the HD from the new DP 2.0? It would certainly make life easier.

I know from a hardware point of view it's a snap. But are there any drivers (video) or other software that I'll need for the newer machine that wouldn't be on the HD from the 1.8? Would Software Update take care of that issue?

It should work
You could even use Carbon Copy Cloner to do that (included in the Disk Utility app)

But it would be much better to do a clean reinstall... you can still copy your home folder + apps : that would save some time
