After doing a search on the topic it seems the following rules are true for G3 desktops. Anyone have different experiences? All statements assume that the RAM is not "bad" or of poor quality.

1) All 128mb PC66, PC100 and PC133 DIMMs will work.
2) 256mb PC66 will work. PC100 and PC133's will work but only if they are 16chip.
3) The odds of finding PC133 256's that are are 16chip at a good price (say $40-$50) locally in a store (e.g. BestBuy or Costco) are nil.
4) The cheapest way to put 3 128mb DIMMs in is probably to buy PC133 256's on sale. They will always work but they will always be seen as only 128's.

Also, if anyone can verify these from their own experience, I'd appreciate knowing.

Just buy this RAM. OWC RAM is super high quality, the price on the DIMM I just linked you to is excellent, and it is guarenteed to work in your box. It is also CL 2 speed, which is the fastest latency you can get on SDRAM. Most SDRAM is either 2.5 or 3. So, the OWC RAM is excellent.
