I have a bay open in my g5 and need some room. What are good choices?

The fastest drive is the IBM/Hitachi Deskstar 7K250 line of drives. They are a little pricey though, as are most things that are at the top of their class.

If you want to save a little money and get a drive that is of the highest level of quality and even quieter, go with a Seagate Barracuda 7200.7 drive.
