When I first got my Dual G4, i bought a 1 GB DIMM for it. It didn't work. I later read that the max it can take is a 512. Yet this company claims to be selling 1 GB dimms that do work with my exact model. Are they full of ****, or can these G4's really take 1 GB DIMMs, just of a certain specific kind/density etc?

I'm not aware of any pre-G5 PowerMac that can handle a 1GB DIMM (some iMacs and PowerBooks can).

Return it as defective.

I think they messed up. I just checked crucial.com and they don't offer anything larger than a 512 chip for a max of 2gb.

Right.. The last generation of PowerMac G4 supports up-to 2GB of RAM.

However, last year I watched the quicktime stream on the PowerMac G5. They had a chart, which listed the PowerMac G4 and PowerMac G5, mentioned that the maximum RAM the PowerMac G4 could hold up-to 4GB and 8GB for the PowerMac G5. I am sure the PowerPC G4 can address up-to 4GB of RAM.

While reading this thread, I check out apple.com again.
The Power Mac G5 Tech Overview (pdf) now say the PowerMac G4 can hold up-to 2GB of RAM on page 12.

Yes, you can buy 1GB DDR2700 RAM modules for your PowerMac G4. However, 2GB is the maximum.
