Depending on your video card, very easy. That is, if you want to go with Apple displays. Your video card will most likely have an ADC port and a DVI port on it, allowing you to run two displays at the same time.
I would snap up a couple of 17 inch studio displays while they last quick, beautiful things.
However, you will need to get the DVI to ADC adapter from Apple to plug in the second display direct link which costs $99.
Otherwise, get an ADC to DVI adapter from Apple direct link, which costs $29, and buy two standard DVI displays from any manufacturer.
Personally these days I would go flat panel. Check out the Samsung and Sony ones. Other than the Apple Displays I still think the Sony models are the most beautiful.... However, they carry Apple prices.
Hope this helped.

Just noticed you are in the UK, check out the UK Apple Store at www.apple.com/ukstore for pricing and availability of the adapters.

thanks a lot for the advice
i had been searching around the net for info and was geting a little disheartened!
ive checked the card and have both ports
two apple 17 inch displays would be excellent,
although i havent seen the older models for sale anywhere for a while now?
i will probably go for two flat screen displays by another manufacturer

Just make sure they have DVI connectors rather than VGA. Other than that, and the purchase of the appropriate adapter for the ADC port, it's plain sailing.
Take a pic of the new setup and post! :o)
Wish I had two displays on my machine!

double check what kind of video card you have first - launch system profiler (apple menu - about this mac...more info....). while the card may have both ports, some of the cards only support mirroring (same thing on both displays) while some are "twinview" letting you span across both monitors.

my sister has the samsung 173 (not sure about the p)... she likes it, and from what I've seen, it is a nice monitor. Not sure how it does as far as getting true colors... also haven't seen it run any games or anything. My sister is a light user and I haven't had much time to fool around with it... but if you are just using it for email, browsing, office, it should be fine. If you are doing heavy-duty print or photo work, or intend to do gaming, I'm not sure how it'd work out.
