I have just set up an Airport Express Network with my G5, and am a little disturbed by the outcome...

Max reception range is about 15 feet!

I have checked the base station - working fine, checked it with my iBook - reception never drops below 4 bars, I have checked the antenna and fitting of the Ae card in my G5 - all fine...

Yet I still get only 1-3 bars reception on my G5, with it wavering all the time... often cutting me off!

Anyone else experienced this, or know any kind of fix?

Try changing channels, moving the APX, moving your cordless phone base and/or enabling Interference Robustness (for starters).
You might also want to check out the Networking forum, which has lots of info on this stuff.

My AEX station is one floor down, my G5 gets 1 to 4 bars, but it fluxes, it doesn't always stay constant (I don't always have 3 bars for example), but I never lose the connection !
You can somewhet control the range of the AEX station, you should check if maybe something has been changed there by accident. I took a screenie of what it looks like (you can find it under 'wireless options' in the configure panel of Airport admin util).
Hope this helps, if not do as aaanorton advised and check networking forum.
