I have a dual 1.8, I currently have 2 WD Raptors running striped 0 with Apple Software RAID. I have a Sonnet Tempo on its way. My plan was to put the 80gb that came with the G5 back in. Would I be better off to run the Raptors off of the Sonnet? Would it make any difference at all?

If the Sonnet supports hardware RAID, then you should move them to the card and use the hardware RAID function. If it doesn't, don't bother.

And I'll just add the reminder that RAID 0 is disastrous for reliability, so don't use it for any data you can't stand to lose.
