IDE drives can be picked up soo cheeeeep - can I just get an IDE drive and a IDE to STA converter and use the drive in my G5?

You can get a bridge for like $25. But I'm not sure it will fit in the G5 then... it takes a bit of space.

But really, is a SATA drive more than $25 more than an IDE drive of the same capacity?

IMO it's a bad idea. Just get a SATA drive.

IDE and SATA drives have been the same price for quite a while now.

The only reason to get a bridge chip is to move over an old IDE drive that you already own. Getting older stuff and using bridge solutions to patch it never works out in the long run.
