G5 Hard drive and Raid Questions

I know hard drive performance is important, so I plan to purchase the 2.7 G5, with the 250gig hard drive, and buy a separate one to raid 0 it. How does this work on the mac? Is it a basic software raid, where I just pop in the second hard drive and configure it as raid 0 in the OS's settings?

How much of a performance gain will I see over a single 250gig drive? Would 2 10krpm Raptors in Raid 0 be significantly faster, as to warrant purchase, or should 2 raid 0 7200rpm be enough? (For music tasks, like notation and some gaming)

Lastly, are there any particular 3rd party drives that should work best with the one that ships with the G5 in raid 0? Perhaps Hitachi?
