If I bump up the memory on one of the new eMacs, will there be enough machine there to run Photoshop? I am hard pressed to justify buying a G5.

Definitely. There are TONS of pros out there in pre-press departments 'shopping on far less powerful older Macs. The eMac is a great affordable all-in-one, particularly with the latest revision. How could you go wrong at that price?

No problem unless you are working with very large hi-res files. Even then it would still work, it would just take a while to do stuff.

i don't know how much RAM you have right now or how much will be needed for the file sizes you work with; but for what it's worth, i can run photoshop 7 on my eMac with 384MB ram. startup is slow(er) than with other machines i have used (not much though). after launch, i am able to run it fine.
some people are like slinkys: they don't do much, but are fun to push down stairs.

Thanks guys for the information. Right now I am running an old G3 266 tower with 8.6. I am planning on moving into the 21st Century with either an eMac or the G5 Dual 2.0. I am going from film to digital photography and I want a good set up. The eMac is a lot easier on the pocketbook. I seem to keep equipment for a LONG time so I may just move up to the G5.

Why not something in the middle like the new iMac?

My g4 1.25 runs PS CS with 2 sticks of 512 fine.
