Hey guys,

i connected my mini to my 30" flat screen HD ready LG tube and changed the frequency, now there's no display, how do i change the frequency back to what it originally was?
i used S-video

will i get better display quality if i use DVI to HDMI cord?

If the TV is capable of HD then yes use DVI, heck if the TV supports any seperated input (RGB, DVI, HDMI, Component) than it will look better than S-Vid.

I connected my Mac (via DVI) to my Mitsubishi 65" which is 1080i native and it looked great. I had overscan issues, but the quality was great.

EDIT: One more thing that should be of interest, when I plugged the TV in over DVI, the Mini was able to communicate with the TV and gather the compatible display modes. This would help alleviate the guess work you were doing.
